Potato fudge recipe in the fudge category

In a large saucepan, cook potatoes until very tender.

Drain and mash with enough milk to make fluffy. You should have 2/3 cup mashed potatoes.

In a heavy 3 quart saucepan, heat chocolate chips over low heat until melted, stirring constantly.

Remove from heat, stir in mashed potatoes, peanut butter and vanilla extract.

Stir in confectioners sugar. If necessary, work in last 1/2 cup of confectioners sugar with your hands.

Stir in 1/2 the peanuts. Turn the mixture into a 9 inch square baking pan.

Press down evenly. Sprinkle with remaining peanuts and press down into candy.

Cover, chill firm. Cut into pieces.
