  1. 2 cups water

  2. 1 large red onion, diced

  3. 3 cloves garlic, minced

  4. 1 bay leaf

  5. 1 t soy sauce

  6. 1/2 t fresh ground pepper

  7. pinch allspice

  8. pinch thyme

  9. 1/8 t liquid smoke

  10. 1 small parsnip, peeled and diced (parsnip haters could sub potato)

  11. 1 small carrot, peeled and diced

  12. 1 small stalk celery, diced

  13. 1/2 small head of cabbage, coarsely chopped

  14. 1 small can kidney beans (3/4 cup)

  15. 1/2 small can tomato paste (1/3 cup?)

  16. 1/4 cup water

  17. salt to taste

  18. Boil water and add onions, garlic, soy sauce, bay leaf, pepper,

  19. allspice, thyme, and liquid smoke. Cover and reduce heat. Smiier for 20 minutes.

  20. Add parsnip, carrot and celery. Add more water if necessary. Recover

  21. and simmer for 1/2 hour.

  22. Add cabbage and beans, simmer uncovered till cabbage is tender. Stir

  23. in tomato paste and 1/4 cup water (add water to desired consistency).

  24. Salt to taste and serve.

  25. Suggested garnishes: chopped parsley and fresh lemon.

  26. Makes 4 small servings
