  1. 1 (29-ounce) can sauerkraut, drained

  2. 3 stalks celery, sliced

  3. 1 medium onion, diced

  4. 1/2 bell pepper, diced (choice of color)

  5. 1/2 cup diced pimiento

  6. 1/3 cup vegetable oil

  7. 1/4 cup white vinegar

  8. 3/4 cup Equal Spoonful*

  9. Salt and pepper to taste

  1. Combine vegetables in a large bowl. Whisk together oil, vinegar and Equal in a small bowl. Toss vegetables and dressing to combine. Season with salt and pepper to taste.

  2. Refrigerate, covered, several hours or overnight to allow flavors to blend.
