  1. 1 3/4 cups flour

  2. 1/2 cup sugar

  3. 2 1/2 teaspoons baking powder

  4. 3/4 cup chopped rhubarb

  5. 3/4 cup sliced strawberry

  6. 1 egg , slightly beaten

  7. 3/4 cup milk

  8. 1/3 cup oil

  1. Mix flour,sugar& baking powder together in a large bowl.

  2. Combine egg, milk & oil in a small bowl.

  3. Stir this into flour mixture with a fork just until moistened.

  4. Fold in rhubarb & strawberries.

  5. Pour into greased muffin tins.

  6. sprinkle top with a bit of white sugar.

  7. Bake 20-25 minutes until golden brown. ?
