  1. Korean Kimchi

  2. 1 head Napa or Chinese cabbage, or regular cabbage, cut into strips about 1 cm

  3. 3 tbls salt

  4. 3 to 6 green or spring onions, chopped

  5. 1 to 3 cloves garlic, minced

  6. 1 teaspoon crushed dried hot red chile

  7. 1 teaspoon chopped gingerroot

  8. Soak cabbage in salt water overnight in a cool location. Remove

  9. cabbage from water. Mix cabbage, onions, salt, garlic, chile and gingerroot in a jar or other container with a tight fitting lid.

  10. Refrigerate for a couple of days. Enjoy,
