  1. 3/4 cup 177ml Boiling water

  2. 1 cup 160g / 5.6oz Raisins

  3. 3/4 cup 148g / 5 1/5oz Butter

  4. 2 1/4 cups 360g / 12oz Dark brown sugar

  5. 1 1/2 teaspoons 7 1/2ml Salt

  6. 3 Eggs

  7. 3/4 teaspoon 3.8ml Cinnamon

  8. 3/4 teaspoon 3.8ml Cloves

  9. 3/4 teaspoon 3.8ml Allspice

  10. 2 1/4 cups 533ml Applesauce

  11. 3 1/4 cups 203g / 7 1/5oz Flour

  12. 1 cup 237ml Walnuts

  13. 2 tablespoons 30ml Baking soda

  1. Mix boiling water with raisins; set aside. Cream together butter and brown sugar.

  2. Add salt, eggs and spices, mixing well. Stir in applesauce, flour and walnuts.

  3. Add baking soda to the raisin mixture.

  4. Combine spice mixture and raisin mixture. Pour into oiled 9-inch spring form pans.

  5. bake at 350F for 30-40 minutes until toothpick comes out clean.

  6. If desired, frost with a thin powdered sugar milk frosting.

  7. Makes 2 cakes
