  1. 40 Cloves fresh garlic, minced

  2. 3 tb Butter

  3. 2 cn

  4. 10 3/4 oz. ea chicken broth

  5. 2 cn Water

  6. 1/2 c Extra dry champagne

  7. 4 Slices French bread

  8. 4 Slices Gruyere cheese

  9. Cayenne pepper

  10. Minced chives

  1. Saute garlic in butter for 10 minutes, stirring often.

  2. Do not brown.

  3. Add broth, water, champagne and simmer 5 minutes.

  4. Toast bread.

  5. Ladle soup into bowls.

  6. Float bread on top of soup, sprinkle with cheese and bake at 475 degrees, uncovered, for 15 minutes.

  7. Sprinkle with cayenne and chives.
