  1. 2 c flour

  2. 1 tsp baking soda

  3. 1/2 tsp salt

  4. 1 c shortening

  5. 2/3 c sugar

  6. 3/4 c packed light brown sugar

  7. 1 egg

  8. 1 bag choc chips Any brand/flavor of ice cream for the middle

  1. Preheat oven to 350 degrees F. Mix flour, baking soda, and salt. In a mixer add shortening, white sugar, and brown sugar, beat until fluffy. Beat in the egg until combined. Gradually beat in the dry ingredients. Stir in choc chips. Refrigerate dough one hour. At this point the dough is a bit crumbly, take a spoonful of dough and roll in hand into a ball, slightly smushing into a cookie shape, place on cookie sheet and bake 11 minutes. These cookies will not thin out or spread much at all from your original shape. Partially thaw any brand/flavor ice cream (I used vanilla). Spoon onto flat bottom side of one cookie, put another cookie on top, smushing slightly again to sandwich them. Keep frozen until you eat.
