  1. 3 cups roasted chicken or turkey

  2. 2 cups cooked wild rice

  3. 3 peeled chopped Granny Smith apples

  4. 2 stalks celery, thinly sliced

  5. 1/2 cup dried cranberries

  6. 1 cup chopped toasted pecans or walnuts

  7. 1 cup nonfat or light mayonnaise

  8. 2 teaspoons lemon juice

  1. Place apples in large bowl and use lemon juice too coat them well. Add chicken or turkey, wild rice, celery, cranberries and nuts, toss to mix well. Add mayonnaise and toss to mix well, adding a little more (mayo) if mixture seems too dry. Cover the salad and refrigerate for at least 2 hours before serving. Serve over a bed of fresh salad greens or mound each serving into the center of a cantaloupe half if desired.
