  1. 3/4 lb. bowtie pasta

  2. 3/4 lb. salmon filets or canned salmon

  3. 1 cup evaporated skim milk

  4. 1/2 cup dry white wine One

  5. 10 oz. package frozen baby peas

  6. 3 scallions, sliced

  7. 1/4 cup minced fresh dill

  8. 2 tsp. Dijon mustard Salt and pepper

  1. Cook the pasta in boiling salted water. Meanwhile, slice the salmon (if you're using fresh salmon) into strips or break it into flakes (if you're using canned salmon) and set aside. In a small saucepan, combine the canned milk and wine. Simmer 3 minutes and add the peas, scallions, mustard, dill, salt and pepper. Just before you drain the pasta, add the salmon to the pot. Put the drained pasta into the saucepan, toss, and correct the seasoning. Makes 4 servings.
