  1. 6 tins skinless, boneless pink or red salmon salt pepper

  1. Drain salmon put into bowl. Add seasoning,season well. and mix well, add beaten eggs, ketchup, sauce and mix well. Add matzo meal and mix till firm consistancy but not too firm...(maybe half cup). Using ice cream scoop form into balls then flatten onto board. get them all ready. In large frying pan add olive oil and sunflower oil (or grapeseed or safflower oil) half and half. Check hot enough with bread cube it should brown nicely. Add cutlets to pan, don’t crowd them too much. Cook till brown then turn and cook other side. Will probably need a few batches.
