  1. 2/3 cup maple syrup

  2. 3 tablespoons Dijon-style mustard

  3. 2 tablespoons cider vinegar

  4. 2 tablespoons soy sauce

  5. 2 pound boneless pork loin roast Salt and pepper to taste

  6. 1 pound carrots, peeled and quartered lengthwise

  7. 6 medium red potatoes, scrubbed and halved

  1. Preheat oven to 350 degrees F. In a small bowl, stir together maple syrup, mustard, vinegar and soy sauce. Season pork with salt and pepper, spread glaze evenly over pork and place in a shallow roasting pan, surrounded by carrots and potatoes.

  2. Roast until internal temperature of pork, measured with a meat thermometer, reaches 155 to 160 degrees F and vegetables are tender, about an hour. Remove from oven; slice roast to serve with vegetables.
