  1. 1 Med. eggplant (about 1 lb)

  2. 4 tb Butter or olive oil

  3. 2 Onions; sliced

  4. 2 Green peppers

  5. 2 Zucchini; sliced

  6. 1/4" thick

  7. 1 c String beans; in

  8. 1 1/2" pcs

  9. 2 Garlic cloves; crushed

  10. 2 tb Chopped parsley

  11. 1/2 ts Sugar

  12. Salt Freshly ground pepper 1 c Beef broth
