  1. Preheat an oven to 350 degrees. Season the fish slices with salt and pepper to taste. Coat them with flour and toss them in your hands or in a sieve to shake off excess flour. Warm the olive oil in a large sauté pan or frying pan over medium heat. Add the fish slices and fry, turning once until golden, about 3 to 4 minutes on each side. Using a slotted utensil, remove to paper towels to drain briefly, then arrange in a gratin fish. Scatter the black olives over the top, filling up any empty spaces. Pour the tomato sauce evenly over the fish. Place in the oven and bake until the sauce is bubbling, about 15 minutes. Serve immediately.
