  1. 10 medium potato es, peeled and diced

  2. 2 medium onion s, finely minced

  3. 4 tsp ginger -garlic paste (if you want to make it-chop equal amts of ginger and garlic)

  4. 1 tsp turmeric powder

  5. 1 tsp chili powder

  6. 4 tsp sugar

  7. 11/3 cups water

  8. 6 Tbs lemon juice

  9. 8 dried red chilies

  10. 1 tsp mustard seeds

  11. 1 tsp cumin seeds

  12. 1 tsp Nigella

  1. Fry the potatoes until tender. Remove from the pan. Fry the onion until golden. Add the ginger garlic paste. Add the turmeric, the water, and lemon juice. Add the chili powder salt and sugar and lLet it cook for a couple seconds then add the potatoes back in. Let the potatoes absorb the water and get a little dry then remove from the fire. In a separate pan, heat the oil. Add the mustard seeds, cumin seeds and Nigella seeds. Add the red chilies unbroken. When the mustard seeds sputter, immediately pour over the potatoes. Mix and serve.
