  1. 1 teaspoon 5ml Olive oil

  2. 1 cup 62g / 2 1/5oz Chopped onion

  3. 4 Garlic - minced

  4. 1 cup 160g / 5.6oz Uncooked long-grain rice

  5. 1 cup 237ml Water

  6. 10 oz 284g Diced tomatoes and green chiles - (1 can) undrained

  7. 1/2 cup 8g / 1/3oz Chopped fresh cilantro

  1. Heat oil in a large saucepan over medium heat. Add onion and garlic, saute 4 minutes. Add rice, water, and tomatoes, bring to a boil. Cover, reduce heat, and simmer 20 minutes or until the liquid is absorbed. Remove from heat, stir in cilantro. Yield: 4 servings (serving size: 1 cup).
