  1. 8 Catfish fillets - (5 to 6 oz ea) - skin removed Salt - as needed Old Bay seasoning - as needed

  2. 4 cups 250g / 8.8oz All-purpose flour

  3. 1 cup 62g / 2 1/5oz Cornmeal Oil - for frying

  1. Recipe Instructions Heat a fryer or a deep pot halfway filled with oil to 350 degrees. Sprinkle both sides of each catfish with salt and Old Bay seasoning. In a separate bowl, combine the flour and the cornmeal. Dredge the catfish in the flour mixture and place in fryer. Deep fry for approximately 7 to 8 minutes until done. Drain on paper towels. This recipe yields 4 servings.
