  1. 1 cup crushed pineapple, drained, save for later use.

  2. 2 1/2 cups grated carrots (small grate size)

  3. 3 cups all purpose flour

  4. 2 teaspoons baking soda

  5. 1 teaspoon baking powder

  6. 1/2 teaspoon salt

  7. 1 cup granulated sugar

  8. 1 cup light brown sugar

  9. 2 teaspoons cinnamon

  10. 1 cup butter, softened

  11. 2 large eggs, lightly beaten

  12. 1 cup coarsely chopped Engish walnuts shaken in

  13. 1 teaspoon flour

  1. Preheat oven to 350 F. Grease and flour 1 9-inch cake pan. Mix all dry ingredients. Cream butter and sugars. Stir in beaten eggs. Add carrots and pineapple. Stir in dry ingredients and mix throughly. Mix in walnuts. Spoon into prepared pan. Smooth top of batter. Place in center rack of oven and bake at 350 F. for 1 hour and 10 minutes. Cool on wire rack. Turn out onto 10-inch platter. Ice with cream cheese frosting.
