    1. 3/4 pound fresh raspberries or 1 package frozen unsweetened raspberries

    2. 1 cup raspberry preserves

    3. 1 tablespoon fresh lemon juice

    4. 4 teaspoons raspberry brandy

    5. 4 spring mints

    6. Additional fresh raspberries for garnish

    1. Place the berries and preserves in the bowl of a food processor and process until pureed. Stain through a fine strainer into a bowl.

    2. Add the lemon juice and mix. Place the bowl in the freezer for about 2 1/2 hours. The mixture should be hard-set but still soft enough in the center so it can be mixed.

    3. Transfer the puree to a bowl of a food processor and process for about 20 seconds. Return the puree to a bowl, and place it back in the freezer for another 2 1/2 ñ 3 hours.

    4. To serve, scoop into glass dishes and spoon 1 teaspoon of the raspberry brandy over each serving. Decorate with a sprig of mint and a few berries.
