  1. 1 tsp extra virgin olive oil

  2. 1/4 cup tomato sauce

  3. 1 egg

  4. 1 slice crusty bread

  1. Heat olive oil in a small skillet or omelet pan over low flame. Add sauce and heat about 30 seconds. Crack egg into a small bowl or custard cup; pour egg into sauce. Cook 2-3 minutes for an 'easy' egg. For a 'medium' egg, cook a few minutes more or place skillet under broiler for a few minutes. Once done, top bread with sauce and egg.
