  8. 2 Egg yolks

  9. 7 tablespoons Dijon mustard

  10. 1/2 cup Red wine vinegar

  11. 2 1/2 cups Olive oil

  1. This recipe includes a piquant Dijon dressing.

  2. Toss greens and cucumber together. Sprinkle lightly with dill.

  3. Add 1 oz. of Dijon Dressing per portion and toss well. Turn onto chilled plates and serve.DIJON DRESSING:

  4. Place yolks in bowl, add mustard and whisk a few minutes. Add vinegar and whisk again.
