  1. 1 lb 454g / 16oz Blackeyed peas - overnight soak optio

  2. 6 Bacon slices - or 1lb smoked sausag

  3. 2 Fresh jalapenos - seeded and diced

  4. 1 Onion - chopped (medium)

  5. 1 Bell pepper - chopped

  6. 2 Celery - chopped

  7. 2 Water

  8. Creole seasoning blend to taste

  9. Salt and black pepper to taste

  1. Bring the peas to a boil, reduce heat, add all other ingredients and cook over low heat, uncovered, for one hour until beans are tender and creamy.

  2. Serve over hot, long-grain white rice and add Tabasco to taste.
