  2. Watercress And Herb Salad With Gingery Asian Dressing

  8. 2 teaspoons minced fresh ginger

  9. 2 tablespoons sesame oil

  10. 2 tablespoons fresh lemon juice

  11. 2 tablespoons white vinegar

  12. 1 tablespoon fish sauce -- optional

  13. 2 dashes tabasco sauce -- up to

  14. 1 tablespoon minced lemon grass -- from

  15. the bottom third of the inner stalk

  16. 1 1/2 teaspoons sugar

  17. salt

  18. freshly cracked white pepper; or black

  19. 2 bunches watercress -- trimmed

  20. washed and dried

  21. 1/2 cup loosely packed whole cilantro leaves

  22. 1/4 cup loosely packed whole mint leaves

  23. 2 medium tomatoes -- cored and quartered

  24. In a medium bowl, combine ginger, sesame oil, lemon juice, inegar, fish

  25. sauce, Tabasco, lemon grass, sugar, salt and white pepper, and whisk until

  26. well blended.

  27. In a large bowl, combine watercress, cilantro, mint and tomato quarters.

  28. Stir the dressing well, add just enough to moisten the salad ingredients,

  29. toss to coat, and serve.
