  1. 3 c Vegetable stock

  2. TO GARNISH -- crushed to split open

  3. more if desired)

  4. 2 sm Fresh red or green chilis

  5. OR- button mushrooms

  6. coarsely separated 2 oz Oyster mushrooms

  7. 2 tb Lemon juice

  8. 1 ts Sugar

  9. roughly torn into three

  10. 3 Kaffir lime leaves

  11. finely chopped into rings

  12. 1 Inch Lemon grass

  13. 1 ts Nam Prik Pow sauce

  14. Coriander leaves

  1. In a large pan, bring the vegetable stock to the boil and stir in the Nam Prik Pow sauce.

  2. Add the remaining ingredients and simmer, stirring well until the mushrooms are just cooked but still al dente.

  3. Pour into a serving bowl and garnish with coriander leaves.
