  1. 1 1/2 pounds zucchini, quartered lengthwise and cut into 1 - 1 1/2 inch sticks 2 tsp olive oil

  2. 1 26-ounce jar low-fat, low sodium marinara sauce

  3. 1/2 cup dried breadcrumbs

  4. 1/2 cup grated parmesan cheese Freshly ground black pepper to taste

  1. Preparation: Preheat oven to 425 degrees. Toss zucchini sticks in 2 tsp olive oil. Roast on a baking sheet for 20 minutes. Remove from oven. Transfer zucchini to an 8 X 8 baking dish. Pour marinara sauce over. Sprinkle with breadcrumbs and top with parmesan cheese. Return to oven and cook for 15 minutes. Serve with noodles.
