  1. Enchiladas

  2. 2 large chicken breasts (cooked and cubed)

  3. 1/2 pkg. taco seasoning

  4. 1/2 small onion (chopped and sauteed)

  5. 1 1/2 C Colby/Jack or cheddar cheese

  6. 8 soft taco size flour tortillas Sauce

  7. 1 can cream of chicken soup

  8. 1 can chopped green chilies

  9. 1/2 lb. Velveeta

  10. 1/2 C evaporated milk

  1. Combine chicken, taco seasoning, onion and cheese. Warm until cheese melts.

  2. Warm tortillas in microwave. Place spoonful of chicken on each tortilla, roll and place seam down in 13x9 inch baking dish.

  3. Combine soup, chilies, Velveeta and evaporated milk and heat until creamy. Pour over tortillas.

  4. Bake 350 degrees for 15 minutes until hot and bubbly.
