  1. 1 x 900g/2 lb whole trout

  2. 45ml/3 tbsp oil

  3. 15ml/1 tbsp garam masala

  4. 1 lemon, cut into wedges Seasoning

  5. 2 1/2cm/1 in ginger root

  6. 8 cloves garlic

  7. 5cm/2 in cube green papaya

  8. 5ml/1 tsp ground turmeric

  9. 1 1/2ml/1/4 tsp chili powder juice of

  10. 2 lemons salt

  1. Method : Clean and scale the fish and wash well and make 4 incisions on either side of the fish. Grind all the seasoning ingredients together to a smooth paste then rub all over the fish, inside and out. Leave to stand for 1 hour. Cook under a hot grill, turning frequently and brushing with the oil, for abut 10 minutes until the fish is almost cooked. Sprinkle with garam masala and grill (broil) until a dark golden brown. Garnish with lemon wedges and serve hot with rice.
