  1. 1/2 cup chablis/dry white wine

  2. 1/2 teaspoon dried whole thyme

  3. 1/4 teaspoon crushed red pepper

  4. 3 cloves garlic -- crushed

  5. 4 red snapper fillets -- (4 oz)

  6. 1/4 cup all purpose flour

  7. 1/4 cup fresh grated parmesan cheese (or romano cheese)

  8. 1/4 teaspoon salt

  9. 1/4 teaspoon pepper vegetable cooking spray

  10. 1 1/2 teaspoons olive oil lemon wedges

  1. Preparation : 1. Combine first four ingredients in a large zip-top heavy duty plastic bag. Add fish: seal bag and marinate in refrigerator for 30 minutes, turning bag occasionally. Remove fish from bag; discard marinade and set fish aside.

  2. Combine flour and next 3 ingredients in large zip-top plastic bag. Add fish fillets, and seal bag; shake to coat fillets with flour mixture.

  3. Coat a large nonstick spray with cooking spray. Add oil, place over medium heat until hot. Add fish and cook 6 minutes on each side or until fish flakes easily when tested with a fork. Serve with lemon wedges.
