  1. Empty sweet potatos and juice into a large pot. Add 1lbs butter, 3/4 brown sugar and cook over meduim heat till mixture cooks down and thickens. Remove from heat and add 1/4 lemon juice, 1/4 cup vanilla, 3 packages cream cheese, and 3 eggs. Whip with mixer till mixture becomes creamy. Pour into large baking dish Make topping by mixing 1 1/2 cup brown sugar, and 1/2 cup flour. Cut in 1lbs butter add 1 lbs pecans and stir together till pecans are coated. Sprinkle topping over sweet potatos and bake at 350 for 1 hr. Top should be carmel brown cover with tin foil if needed.
