  2. 1/3 cup tarragon white wine vinegar or tarragon vinegar

  3. 3 tablespoons olive or vegetable oil

  4. 2 tablespoons chopped fresh or 2 teaspoons dried oregano leaves

  5. 1/2 teaspoon sugar

  6. 1/2 teaspoon ground mustard (dry)

  7. 1/2 teaspoon salt

  8. 1/2 teaspoon pepper

  9. 2 cloves garlic, finely chopped

  10. 2 large yellow bell peppers, sliced into thin rings

  11. 3 large tomatoes, sliced

  12. Spinach leaves

  13. 2 ounces feta cheese, crumbled

  1. Mix vinegar, oil, oregano, sugar, mustard, salt, pepper, and garlic. Place bell peppers and tomatoes in nonmetal container. Pour vinegar mixture over vegetables. Cover and refrigerate 1 hour to blend flavors. Line serving plater with spinach. Drain vegetables; place on spinach. Sprinkle with cheese.
