  1. 2 mackerel, medium size

  2. 1 1/2 cups rice, washed

  3. 4 tomatoes, sliced

  4. 1 cup olives, chopped, pitted

  5. 4 tablespoons butter

  6. 1 onion, chopped Seasonings to taste

  1. Instructions Boil the rice for 20 minutes in plenty of salted water. Drain off water. While rice is boiling, place all other ingredients with the fish in a baking pan and bake for 20 minutes in moderate oven. Then add the rice and mix gently with a fork. Bake 10 minutes longer. Then serve.
