  2. 200g Shiitake medium size mushrooms

  3. 1 Sweet yellow Pepper

  4. 1/2 Cucumber

  5. 2 Spring onions

  6. 2 Courgettes

  7. 1 Yellow chili

  8. 50g Rocket leaves

  9. 1 Table spoon olive oil

  10. Salt and pepper

  1. Peel and finely chop onions and chili together with olive oil.

  2. Stir fry until golden.

  3. Slice courgettes, chop pepper into strips and add to frying pan or wok. Toss pan regularly on high heat for about 2 minutes.

  4. Season with salt and pepper.

  5. Chop cucumber into cubes and sliced mushrooms. Add to the pan.

  6. Toss pan regularly for another 2 minutes.

  7. Serve hot with fresh rocket leaves.

  8. Mushrooms can help control blood pressure, lower cholesterol, kill bacteria, fight cancer and strengthen bones.
