  1. 2 pounds cooked black-eyed peas

  2. 2 scallions --cut into 1/2-inch pieces

  3. 1 red bell pepper --seeded and finely diced

  4. 1/2 green bell pepper --seeded and finely diced

  5. 1 tablespoon minced garlic

  6. 1/4 cup chopped cilantro

  7. 1/2 cup olive oil

  8. 3 tablespoons red wine vinegar

  9. 1 tablespoon whole grain mustard -- (up to 2)

  10. 1 fresh jalapeno -- minced salt and freshly ground black pepper -- to taste

  1. Preparation : In a large bowl, combine the peas, scallions, bell peppers, garlic and cilantro. In a small bowl, whisk together the remaining ingredients. Pour over the salad mixture and combine well. Serve.
