  2. CURRIED CUCUMBER AND TOMATO SOUP

  6. 1 md Seedless English cucumber,

  7. -peeled

  8. 1 md Ripe tomato, peeled

  9. 1 tb Chopped onion

  10. 1 sm Clove garlic, chopped

  11. 1/4 ts Curry powder

  12. Pinch each of nutmeg, salt

  13. -and pepper

  14. 1/2 c Water

  15. 1 tb Cider or wine vinegar

  16. 2 To 4 drops hot pepper sauce

  17. 2 ts Sugar

  18. 10 minutes Cool time:

  19. 1 hour

  20. This cool, crisp soup is best made in summer when the

  21. tomatoes and cucumbers are in season, but make sure

  22. they are peeled because their peel will be too bitter

  23. in this combination.

  25. Chop cucumber and tomatoe into medium sized chunks. In

  26. container of blender or food processor, combine

  27. cucumber, tomato, onion, garlic,curry, nutmeg, salt,

  28. pepper, water, vinegar, hot pepper sauce and sugar.

  29. Puree until smooth. Pour into a large bowl or pitcher.

  30. Chill at least 1 hour. Pour into soup bowls or mugs.

  31. Garnish with chopped parsley, if desired. Makes 4 cups.
