  1. Lemon Pound Cake

  2. 1 1/2 cups unsalted butter

  3. 2 1/2 cups sugar

  4. 6 eggs, well beaten

  5. 3 teaspoons lemon oil extract

  6. 1 cup sour cream

  7. 3 cups sifted flour

  8. 1/4 teaspoon baking soda

  9. 1/4 teaspoon salt

  10. Preheat to 300 degrees F. In a large bowl, cream the unsalted

  11. butter with the sugar. Blend in the well beaten eggs and lemon

  12. oil extract. Add the the sour cream, sifted flour, baking soda

  13. and, salt. Mix at a medium speed for 2 minutes. Bake in a well

  14. greased bundt or tube pan for 1 1/2 hours or until a toothpick

  15. inserted into the cake comes out clean. Cool pan on a wire rack

  16. for 30 minutes before unmolding.
