  1. 2 lbs Red Potatoes chopped (w/ skin)

  2. 2 chicken bouillon cubes

  3. 1 cup mayonnaise

  4. 2 tablespoons mustard

  5. 2 pickle spears chopped

  6. 1/4 inch pieces 1 cup pickle juice

  7. 3 boiled eggs (chopped)

  8. 1 teaspoon dried parsley

  9. 1 teaspoon garlic powder

  1. bring pot of water to boil and add the potatoes with the bouillon and cook until potatoes are soft but not mushy, about 15 minutes. Soak the potatoes in the pickle juice. Meanwhile, in a separate bowl, mix the rest of the ingredients together. Mix the potatoes and pickle juice in with the other ingredients. Serve chilled. Yield: serves 6
