Savoury Shortbread

125 ml

2 1/2 cups shredded mozzarella cheese

625 ml

2 tbsp grated parmesan or romano cheese

1 1/2 cups all purpose flour

375 ml

1/4 tsp each salt and pepper

1 ml

2 tbsp milk

25 ml

Instructions :

350F (180C). Using electric mixer, beat together butter, Mozzarella and Parmesan cheeses. Using wooden spoon, stir in remaining ingredients. Divide dough into thirds; wrap each in plastic wrap and chill for 15 minutes.

1 piece at a time, until

1/4" (5 mm) thick.

Using star shaped cookie cutter, cut out stars; transfer to parchment paper-lined cookie sheets.

Bake in centre of oven for about 15 minutes or until crisp and golden. Cool on pan on racks.

Makes about 32 stars.

2-1/2 cups shredded Monterey Jack cheese and add

3 tbsp (45 ml) minced fresh jalapeno to the dough. (1 jalapeno).
