  1. 4 1/2 lbs 2043g / 72oz Brisket

  2. 1 lb 454g / 16oz Onion - quartered (small)

  3. 1 Garlic clove - halved

  4. 10 Whole cloves

  5. Water

  6. Sauce

  7. 10 oz 284g Apple butter

  8. 1/2 cup 118ml Dry white wine

  9. 2 tablespoons 30ml Minced scallions

  10. 3 tablespoons 45ml Prepared mustard

  11. 1 1/2 teaspoons 7 1/2ml Salt

  12. 3/4 teaspoon 3.8ml Curry powder

  13. 1/2 teaspoon 2 1/2ml Pepper

  1. In an 8-quart pot, combine brisket, onion, garlic, and cloves. Add enough water to cover meat. Bring to a boil and simmer until meat is tender, about 2 1/2 hours. Remove brisket from pot.

  2. For the sauce: While meat is cooking, combine apple butter, white wine, scallions, mustard, salt, curry powder, and pepper in a 2-quart saucepan. Heat until apple butter melts, stirring occasionally.

  3. Preheat oven to 325 degrees.

  4. Place brisket in a roasting pan and brush with apple butter sauce. Roast uncovered 30 minutes until meat is heated through. Baste 2 or 3 times during roasting. This recipe serves 8 to 10.
