  1. 2 lbs. boneless pork loin

  2. 1 clove garlic, minced

  3. 1 tbsp. dried rosemary Salt to taste Freshly ground pepper to taste

  4. 1/4 cup olive oil

  5. 1/4 cup white wine

  1. Crush garlic with rosemary, salt and pepper, making a paste. Pierce meat in several places and press garlic mixture into openings. Rub meat with remaining mixture and olive oil. Place in 350 degree oven for two hours, turning and basting with pan liquids. After two hours, deglaze meat with wine. Remove roast to platter and serve with pan juices.
