  1. Garlic Chips

  2. 1 cup finely ground corn flour (not corn meal)

  3. 1/2 cup whole wheat pastry flour

  4. 1 tsp olive oil

  5. 1 tsp salt

  6. 1 pinch sugar

  7. enough warm water to make the dough workable

  8. Combine all ingredients and knead until well mixed. Roll out very

  9. thin.

  10. Place on a non-stick cookie sheet with a sprinkling of corn meal

  11. underneath.

  12. Topping

  13. Mozzarella cheese on the bottom

  14. Mix olive oil and coarsely chopped garlic and put on top generously.

  15. 400 degree oven for 5-6 minutes or until the

  16. cheese is bubbly and the crust is starting to brown.

  17. The key here is to cook the thin crust quickly so the garlic does

  18. not brown on top. When it's done, cut it in wedges and serve hot.
