  1. 8 ounce(s) butter, softened

  2. 3/4 cup(s) Sugar, caster , fine sugar is best

  3. 2 teaspoon(s) Vanilla extract

  4. 1 Egg yolk

  5. 21/4 cup(s) plain all purpose flour, sifted

  6. 1/4 teaspoon(s) Mixed Spice

  1. Pre-heat oven to (350 F)

  2. Place butter and sugar in bowl of an electric mixer, beat until pale & creamy. Add vanilla, spice & egg yolk, beat to combine. Add flour mix until a smooth dough forms, don't over beat. Wrap in plastic wrap and place in fridge for appox 30 mins until firm.

  3. Roll out dough between sheets of non stick baking paper approx 3mm thick. Place in fridge to firm up. Using a snowflake cookie cutter, cut out cookies and place on baking tray lined with non stick baking paper, brush with egg white and decorate with sugar in a star star formationso each frond of snowflake has sugar sprinkles. Bake for 15 - 18mins until light golden.

  4. to hang on tree make a small hole in tip prior to baking. After cooled tie your ribbon or string through hole.
