  1. 2 cups all-purpose flour

  2. 1/2 cup granulated sugar

  3. 1 tablespoon baking powder

  4. 1 teaspoon cinnamon

  5. 1/2 teaspoon salt

  6. 1 cup buttermilk

  7. 1 large egg, beaten

  8. 1/3 cup vegetable oil

  9. 1 cup mashed bananas

  10. 1 teaspoon vanilla extract

  11. 3/4 cup shredded coconut

  1. Heat oven to 375 °F (190 °C). Grease and flour a 12-cup muffin tin or line with paper liners. Combine flour, sugar, baking powder, cinnamon and salt in a medium bowl; make a well in the center. In another bowl, mix buttermilk, egg, vegetable oil, bananas, vanilla and coconut in small bowl. Pour mixture into well. Mix batter until just moistened; do not over mix. Fill prepared muffin tins three-fourths full. Bake for 18 to 20 minutes or until muffins test done. Cool in pan on wire rack.
