  5. 2 large ripe red tomatoes -- sliced

  6. 2 large ripe yellow tomatoes -- sliced

  7. 1 large sweet onion -- sliced

  8. 1/4" thick

  9. 1 Haas avocado -- sliced

  10. 2 tablespoons mayonnaise

  11. 1/4 teaspoon ancho chili powder

  12. 1 lemon -- juice of

  13. salt -- to taste

  14. freshly ground black pepper -- to taste

  15. 4 sourdough baguettes

  1. Prepare a wood or charcoal grill and let it burn down to embers.

  2. Grill lobster meat for 15 minutes or until cooked.

  3. In a small mixing bowl combine mayonnaise, Ancho powder and lemon juice.

  4. Season to taste with salt and pepper.

  5. On the baguettes spread mayonnaise and layer tomatoes, onion and avocado. Add lobster.

  6. Serve immediately.
