  1. 100g cashew nuts

  2. 1 tbsp vegetable oil

  3. 400g mange tout peas

  4. 4 heads of

  5. pak choi, sliced with stems and leaves separated

  6. 1/2 bottle

  7. Blue Dragon Oyster Sauce

  8. 1 tbsp Blue Dragon Light Soy Sauce

  9. 2 tbsp water

  10. Blue Dragon Sesame Oil , to taste

  1. In a dry wok or frying pan, heat the cashew nuts over a medium heat until they turn golden brown and smell nutty. Set aside.

  2. Add the oil to the wok and heat until simmering and just before smoking point. Add the mange tout and pak choi stems. Stir fry for 2-3 minutes until cooked but still al dente.

  3. Next add the pak choi leaves, toasted cashews, Oyster Sauce, Light Soy Sauce and water and stir fry for a futher minute, tossing the vegetables to coat. Finally turn off the heat and drizzle the Sesame Oil over just before serving.
