  1. 2 Cups flour

  2. 1 1/2 TBS cinnamon

  3. 1 TSP baking soda

  4. 1 Cup canned pumpkin

  5. 1 Cup sugar

  6. 1/2 shortening (Yes, use Crisco )

  7. 1 Cup raisins

  8. 1 Cup Chopped nuts (Walnut or pecan )

  9. 1 TSP vanilla

  10. Cream Cheese Frosting: (Optional)

  11. 1 (8 ounce) package cream cheese , softened

  12. 1/4 cup butter , softened

  13. 1 cup sifted confectioners' sugar

  14. 1/2 teaspoon vanilla extract

  15. Mix all till smooth and creamy!

  1. Mix the first for ingredients in a seperate bowl, set aside.

  2. Mix the last six ingredients, cutting in the shortening.

  3. Mix half of the dry ingredients, with the wet and mix. Slowly add the rest of the dry ingredients and mix well by hand.

  4. Use a table spoon and put cookies on greased pan.

  5. Bake at 375 for 15 minutes, but check after 10 minutes when using a dark cookie sheet.

  6. Transfer to wire rack and cool.

  7. Frost with Optional Cream Cheese Frosting!!! YUM Thanks Lura Delicious.
