  1. For the crust

  2. 200 gms bourbon biscuits, crushed

  3. 2 tbsp melted butter

  4. For the filling

  5. 2 cups milk

  6. 7 gms agar-agar

  7. 6 tbsp sugar

  8. 1 cup whipped cream

  9. 1/4 tsp green colour

  10. 1/2 tsp peppermint essence

  11. For the garnish

  12. whipped cream

  13. grated dark chocolate

  1. Mix the crushed biscuits with the butter and line the bottom of a 175 mm. (7") loose bottomed pie tin.

  2. Chill till set.

  3. Soak the agar agar in 1 cup of cold water for 1 hour. Cook on a slow flame until it dissolves.

  4. Heat the milk and add the dissolved agar agar. Stir till it dissolves.

  5. Strain the mixture and cool.

  6. Fold in the whipped cream, add the colour and essence.

  7. Pour the filling mixture over the set crust.

  8. Refrigerate till the filling sets.

  9. Garnish with whipped cream and grated chocolate.
