  1. 3 medium tomatoes

  2. 1/2 lb fresh mozzarella cheese (if all you can find is the tub, make sure to pat it real dry)

  3. 1/2 cup torn basil leaves

  4. 3 tablespoons olive oil

  5. 4 teaspoons balsamic vinegar

  6. kosher salt or sea salt , to taste

  1. Cut up the tomatoes and mozzarella into large cubes.

  2. Add basil leaves and drizzle w/ vinegar and olive oil.

  3. Stir lightly.

  4. Sprinkle with a little salt.

  5. Chill at least one hour.

  6. Store in refrigerator.
