  1. 2 cups 125g / 4.4oz Self-rising flour

  2. 3/4 cup 148g / 5 1/5oz Sugar

  3. 1 cup 237ml Canned crushed pineapple with juice

  4. 2 Eggs

  5. 2 tablespoons 30ml Vegetable oil

  6. 3/4 cup 109g / 3.8oz Grated sharp cheddar cheese

  7. 1/2 cup 73g / 2.6oz Chopped walnuts

  8. 1/2 teaspoon 2 1/2ml Pineapple extract

  1. Recipe Instructions Preheat oven to 350 degrees. Using a large mixing bowl, sift the flour and sugar and mix together. In a separate bowl, mix the pineapple, eggs, oil, and add to the flour mixture, mix well. Fold in the cheese, nuts, and pineapple extract. Pour mixture into a greased 9- by 3-inch loaf pan. Bake for 1 hour. Cool and turn out bread from pan. Allow to cool completely before slicing. This recipe yields 1 loaf.
