  1. 3 Tbsp oil

  2. 1 red onion finely chopped

  3. 2 garlic cloves minced

  4. 1 tsp sweet curry powder

  5. 1 tsp cumin

  6. 1/3 cup chicken broth

  7. 1 lb bag frozen peas

  8. 1 cup sliced almonds toasted

  9. 1/3 cup plain yogurt

  10. 2 Tbsp chopped fresh cilantro salt and pepper to taste

  11. 1 lemon

  1. Saute the onion in oil for 5 minutes. Add seasonings and garlic and saute an additional minute. Add broth and boil for 3 minutes. Stir in peas and almonds and cook for 5 minutes or until liquid is partially reduced. Remove from heat and stir in cilantro and yogurt. Place into heated serving bowls. Add a dash of salt and pepper on top, and drizzle each bowl with lemon juice, if desired. Yield: serves 4
