  2. FRESH CALIFORNIA TOMATO SUMMER SOUP

  6. 3 c Finely chopped onions

  7. 3 c Diced celery

  8. 6 tb Olive oil

  9. 3 tb Minced garlic

  10. 3 c Diced zucchini

  11. 6 c Chicken broth -- low salt

  12. 4 1/2 qt Pasta shells

  13. 4 1/2 qt Diced tomatoes

  14. 6 tb Dried basil

  15. 2 1/2 ts Salt

  16. 1 1/2 ts Black pepper

  17. 1/2 c Grated parmesan cheese

  18. Saut‚ onions and celery in oil in a stockpot over

  19. medium high hear for 5 minutes, or until tender. Stir

  20. in garlic, zucchini and corn; saut‚ 2 minutes. Add

  21. chicken stock, bring to a boil and add remaining

  22. ingredients except Parmesan. Cook until pasta is

  23. 10 minutes. To serve: Spoon

  24. 1-1/2 Cups

  25. soup into each bowl. Top each with 1 tsp. Parmesan

  26. cheese.
